I started making dinner last night and my dad called to go out to dinner....so tonight we're having grilled chicken thighs, corn on the cob and tomato,
pepper and onion salad. I can't wait! That salad is my favorite and all the veggies came from the farmers market.

Wednesday we had dinner with b/f's mom..... there was bratwurst, pasta salad, regular salad, and a bunch of other stuff. Pretty yummy! Tonight, no clue
what we'll be eating for dinner, gotta stop at the store on the way home..... I'll figure it out then.

I made fajitas, sweet corn cake, refried beans and yellow rice. I ended up making a bean and cheese burrito for myself..for some reason the fajitas were just
feeling *bleh* to me! No mixes or store bought anything..we make the tortillas and refried beans. Oh! We had teeny little shrimp quesadillas as an appetizer.
We have two huge hikes planned over the next 2 days...recovery, I think

I had a farro salad with purslane and tomatoes, corn (you guys must think I eat corn every day --- I LOVE corn in the summer so I do have it a lot), and
cucumber salad, made with cukes and mint from Mom's garden and yogurt.

Yesterday we had homemade pizza. Still deciding on tonight. It's DH's bday and I asked him what he wanted me to make. He said, "subs".
Subs? Ok...easy enough, but really? He'll probably get his wish because: 1) it's his birthday; and 2) we have football practice.

Last night was garden salad: tomatos, cukes, basil, and mozz. balls.....balsamic vinegar and tons of black pepper.
Tonight: a friend's rehearsal dinner, so a nice Italian place, planning to eat lightly because.... TOMORROW: The Big Black Tie Wedding....OMG, there's going to be a roast pig & baby lamb chops at the COCKTAIL HOUR. Dinner will be filet mignon & sea bass. I don't even eat meat, lol, but DH is very very looking forward to it. (And the main course of course is that two dear friends will be married!) ~Claire |

got some good salmon yesterday.

Well, it ended up being brocolli and cheese leftover from the night before. . .cuyz I got caught up in what I was doing and forgot to eat dinner. Till it was
8:30pm and wondered why I was hungry. LOL Soooooo, tonight I'm maing flour tortillas for some mshroom quesadillas and probably a big salad on the side.
